Quality Prosecco comes to us in a range of attractive price points, but Mionetto's is especially delectable. The wine is just off-dry, with gently cleansing bubble action and charming pear-apple flavors. The frothiness will keep fresh for several days in the fridge, assuming the use of a Champagne stopper. Established in the late 1800s, the winery is run by the founder's grandson, Sergio Mionetto, with his two brothers. Prosecco is the traditional base for the Bellini, first concocted at Harry's Bar in Venice. Originally made with fresh white peach juice, the modern Bellini has morphed, with restaurants most often using peach nectar or concentrate.
