Ice Wine is called such because the grapes literally freeze on the vine. What little juice is squeezed out of them produces a sweet wine that can only be described as nectar.
Left on the vine until thoroughly frozen, these grapes are pressed before they are allowed to thaw. In this way, only the ripest grapes release their honey-like juice. The result is an elegant, rich golden wine with intense apple, peach and mango flavors that linger on the palate.
